Rice with coriander, blueberries, and toasted almonds

  • 1 ½ cup rice
  • 2 tbsp oil
  • 3 cup water

Coriander paste:

  • 1/2 cup toasted almonds or peanuts
  • 1 cup coriander (leaves and thin stems)
  • 1/2 cup olive or vegetal oil
  • Salt to taste
  • 1/2 lemon zest
  • 1 cup water (ideally filtered)
  • 1 cup blueberries
  • 1 tbsp toasted almonds


Fry the rice in oil until transparent. Pour 3 cups of water in a pot. Simmer until rice is soft, for about 20 minutes.

Meanwhile, prepare the coriander paste. Blend all ingredients until obtaining a homogeneous mixture (if it turns out too thick, add some more water). Mix the coriander paste with the rice.

For the assembly:
With the help of a round mold about 4 inches in diameter, previously oiled, fill half of the mold with green rice and add a layer of blueberries over it. Then add another layer of green rice over the blueberries. Remove the round mold and decorate with toasted almonds and blueberries.
