Ingredients

  • 1 large pork sirloin, around 3 lb
  • 2 onions
  • 1 garlic clove
  • 1 tbsp butter
  • 1 large and ripe tomato
  • 1 cup pomegranate arils
  • 1 cup chicken broth
  • Salt and black pepper
  • Olive oil

Preparation

Clean the sirloin, removing all the fat. Once clean and whole, season with salt and pepper.

For the sauce, put the olive oil in a medium pot over medium heat, and sauté the chopped onions, add the minced garlic, and allow to cook over medium heat.

Once it has color, add the butter and leave for another 5 minutes, stirring every now and then, then add the chopped tomato.

Cook for around 10 minutes over low heat.

Add the pomegranate arils (reserve a few arils for decoration) to the sauce, and also add the cup of chicken broth.

Correct the taste and allow to reduce further, simmering for 15 minutes.
