  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small red onion, finely chopped
  • 2 cups arborio rice or short-grain rice
  • 1/2 cup dry white wine
  • 5/6 cups hot chicken or vegetable broth
  • 2 cups strawberries, finely chopped
  • Salt and pepper to taste
  • 1/2 cup parmesan cheese, grated
  • Basil leaves and strawberries to decorate

(6-8 servings)


Cook the onion with butter and olive oil in a pot, it should be translucent but not brown.

Add the rice and cook for 5 more minutes, season with salt and pepper.

Add strawberries, white wine (it can also be sparkling wine) and once the white wine has absorbed, add the broth little by little.

Don’t stop stirring, this process takes about 20 minutes.

It should have a creamy consistency, but firm and soft inside.

Add the cheese and correct the seasoning, the strawberries cook in the rice and give it a special color! Correct the seasoning and serve immediately.

Serve with a glass of sparkling wine, it wouldn’t be a bad idea to add blue cheese crumbles on top and a touch of balsamic vinegar! An original and light dish! Thanks to @lacocina_deluli for the photo!!
