Ingredients

(4 servings)

  • 1 cup rice
  • 1 chunk onion, 1 chunk bell pepper, and 1 chunk carrot
  • 2 cups boiling water or broth
  • 3.5 oz feta cheese
  • 3.4 fl oz natural yogurt
  • ½ cup fresh blueberries
  • 2 tbsp minced chives
  • Salt, pepper and olive oil

Preparation

  1. For the rice, in a hot pot, add the olive oil, then minced onion, bell pepper and carrot. When they begin to brown, add the rice, some salt and pepper, and once hot, add boiling water. Allow to boil over medium heat for 18 to 20 minutes with the lid on. Once cooked, remove the lid and allow to cool.
  2. In a jar, mix the yogurt, some olive oil, half of the feta cheese (you can use a hand mixer or do it by hand).
  3. Add the yogurt and cheese mixture to the rice, then add chives and blueberries. Stir, taste, and season if necessary.
  4. Put in a dish or plate and add the remaining shredded feta cheese on top.
