First, caramelize the pears. For this you have to peel them, remove their core, and then cut each pear in 8 wedges. Then, in a pan with some butter and a tablespoon of oil, sauté the pear wedges until golden. Add the 2 tablespoons of sugar and allow to caramelize.
Rinse the mixed greens, and cut the walnuts into quarters.
To assemble, first put the mixed greens, then the pears with some juice, sprinkle some pomegranate arils around the whole plate, and lastly, add the blue cheese and walnuts.
Add some olive oil and balsamic vinegar to taste.
