CAESAR SALAD WITH RASPBERRIES

Ingredients

  • 9 oz raspberries
  • 5.3 oz mixed greens
  • 14 oz chicken
  • 5.3 oz parmesan cheese
  • 1 garlic clove
  • 2 egg yolks
  • 1/2 cup lemon juice
  • 1/2 cup canola oil
  • 1 tbsp old-style mustard
  • 1 tbsp oregano
  • 4 slices white bread
  • 1/2 cup sugar
  • 1 tbsp oregano

Preparation

First put the sugar and water in a pan to make syrup. Once almost done, add the raspberries and wait until the mixture begins to bubble slightly (this indicates the syrup is done). Allow to set.

Separately, dice the chicken and put in a very hot pan to sear it. Once ready, add to the syrup, then roll over sesame seeds, and allow to cool.

For the croutons, you will need 4 slices of white bread, without crust. Dice the bread slices and put in a pan with previously melted butter, add salt, oregano, and garlic.

Shake the pan constantly to brown the croutons. Once brown, set aside.

For the Caesar dressing, put old-style mustard, 2 egg yolks, lemon juice, and ground garlic in a bowl.

Beat vigorously and start mixing in the canola oil little by little. Once the desired texture is reached, add half of the parmesan cheese, and the dressing is done.
