Ingredients

  • 2 eggs
  • 1 cup sugar
  • 7 oz grated coconut
  • 4.2 oz butter
  • 3/4 cup all-purpose flour
  • 10.5 oz blueberries

Preparation

Mix 2 eggs (without beating), 1 cup sugar, 7 oz grated coconut (you can use 1/2 grated coconut and 1/2 coconut slices). It is easier to incorporate everything with a wire whisk.

Add 4.2 oz of melted butter and mix thoroughly. Add 3/4 cup all-purpose flour and mix with a spatula. Pour the mixture into a buttered square mold, preferably with parchment paper. It is a really thick dough, don’t panic, it’s fine. Add 10.5 oz blueberries (gently crushed) on top of the batter.

Bake at 370°F for 30 minutes. And voilà!
