Keto coconut and raspberry volcanoes

Ingredients

  • 1 cup grated coconut
  • 1 small egg
  • 1/4 cup allulose
  • 1 tbsp mashed raspberries
  • 3-4 squares of chocolate (80% cacao)

Preparation

Mix the coconut and sweetener in a bowl and stir until combined. Add the egg until the mixture has such texture that you can grab it with your hands and form the mini volcanoes (add a bit more coconut if necessary).

Split the mixture in half, and add the mashed raspberries to one half. (If you wish to make them all with raspberries, add 2 spoonfuls of raspberries instead of one).

Once the volcanoes are formed, put them in a baking pan with a baking sheet and bake for 10 minutes at 340°F or until their tips are brown.

While they cool off, melt the chocolate in the microwave for a few seconds, and then pour it on the tip of the volcano, or if you want you can decorate the entire volcano with chocolate (in that case, use more chocolate).

Freeze for 20 minutes so that the chocolate becomes hard, and done! Enjoy!
