Ingredients

  • 1 can preserved asparagus
  • 8 cups mixed greens, tight
  • 4 cups chicken breasts, grilled and cut into strips
  • 1 cup physalis, cut into halves
  • ½ cup scallion, thinly sliced
  • ½ cup sliced toasted almonds
  • 2 tbsp sesame
  • 15 wonton wrappers

Dressing:

  • ¼ cup light soy sauce
  • ¼ cup lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp sesame oil
  • 1/3 cup olive oil

Preparation

Step 1:
Prepare the dressing in a bowl, mixing all the ingredients with a whisk. Set aside.

Step 2:
Cut the wonton wrappers into strips, brush them with olive oil, and put them in an oven tray until brown. Set aside.

Step 3:
Mix the chicken with the scallions and one third of the dressing in a bowl. In a different bowl, combine the mixed greens with the almonds, physalis, and sesame seeds.

Step 4:
Add the chicken and the rest of the dressing to the previous mixture. Mix well. Put in a salad bowl with the wonton chips on top.

Ideal for a light and healthy lunch. This salad has 375 kcal per serving. Eating well is feeling well.
