(2 jars)

  • 8 spinach leaves
  • 2 slices white bread
  • 1 cup blackberries
  • 2 oz goat cheese
  • Olive oil
  • Oregano
  • Salt
  • Lemon
  • Rice vinegar


Wash and mince the spinach. Set aside.

Crumble the goat cheese or dice into small cubes. Set aside.

Cut the bread into small cubes and put in a plate. Drizzle some olive oil and dust some oregano and salt. Put in the microwave for 1 minute, take out and stir, heat for 1 more minute or until the croutons are done. The time will depend on the power of your microwave oven.

Arrange a bed of spinach in a jar, add croutons, blackberries, some more spinach and goat cheese at the end. Add some olive oil, salt and lemon to taste, and a dash of rice vinegar.

Before serving, shake the jar to mix the ingredients and dressing.
