BLACK BEAN, CHICKPEA, AVOCADO AND STRAWBERRY SALAD

Ingredients

  • 1 package cooked black beans
  • 1 package cooked chickpeas
  • 1/2 cup red onion, diced
  • 6 strawberries
  • 1 avocado, diced

For the dressing:

  • 1 garlic clove, minced
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • ¼ cup basil, minced
  • 2 tbsp parsley, minced
  • 1 tsp honey

Preparation

Mix all the ingredients for the dressing and season with salt and pepper to taste.

Put the beans, chickpeas, onion, avocado, and diced strawberries in a bowl.

Add the previously prepared dressing and refrigerate for around 30 minutes.
