BABY POTATOES STUFFED WITH SOUR CREAM, BLUEBERRIES AND CHIVES

Ingredients

  • 2.2 lb baby potatoes
  • 1 cup sour cream
  • 3/4 cup blueberries, halved
  • 1 tbsp minced chives
  • 1 tsp thyme
  • Sea salt
  • Pepper

Preparation

Preheat the oven to 400°F.

Wash the potatoes with enough water, dry them, and put them in a baking dish.

Add oil, thyme, salt and pepper. Mix well and cover with aluminum foil. Bake for 25 minutes.

Once the time is up, remove the aluminum foil and brown for 10 more minutes.

Take the potatoes out of the oven and cut them a cross on them.

Inside the cut, add a spoonful of sour cream, some bacon bits, some blueberry halves, and finally, sprinkle some chives on top.
