Ingredients

  • 1 lb 2 oz salmon
  • 2 oz blueberries
  • 2 oz rough bindweed fruit
  • 1 tbsp Dijon mustard
  • 1 tbsp capers
  • 1 green chili pepper
  • 1 red onion
  • 1/2 tbsp grated ginger
  • 4 lemons
  • Salt and pepper

Preparation

Dice the salmon and put them in a bowl with physalis, blueberries, capers, green chili pepper, ginger and onion.

Mix well and season with salt and pepper.

Add lemon juice and allow to macerate for 5 minutes.

Fill the mold with the tartare, pressing lightly to compact it, and refrigerate for a few minutes.

Unmold and serve.
