Ingredients

(8 servings)

  • 1 large trout
  • 2 tbsp mustard
  • 1 tbsp honey
  • 2 tbsp soy sauce

For the brittle:

  • 1 cup oatmeal
  • 1/2 cup chopped almonds
  • 1/2 cup parmesan cheese
  • 2 tbsp butter
  • 2 tbsp oil
  • 3/4 cup blackberries

Preparation

  1. Mix the soy sauce with honey and mustard.
  2. Put the trout in a baking dish and add the previous mixture. Allow to marinate for half an hour.
  3. For the brittle, mix all the ingredients until obtaining a sticky dough that is easy to

handle.

  1. Cover the entire surface of the trout with almond and blackberry brittle.
  2. Preheat the oven to 360°F and roast the trout for 15 minutes with top and bottom heat. Then 8 more minutes with top heat only to brown the brittle.
