Spinach and Strawberry French Quiche

  • 9 oz all-purpose flour
  • 5 oz salted butter
  • 2 eggs (1 yolk and 1 whole egg)
  • 1 oz salt and pepper
  • 2 tsp cornstarch


  • 5 fl oz cream
  • 2 eggs
  • 1 tbsp (0.7 oz) cornstarch
  • ½ packet grated cheese
  • 5 fl oz whole milk
  • 1 oz salt and pepper to taste
  • 7 oz cooked spinach
  • 5 oz fresh strawberries, chopped


Soften the butter.

Add cornstarch, yolk, and egg.

Then add the flour and form a smooth dough.

Flour your counter and roll out the dough to 4 mm.

Put in a baking pan and freeze for 15 minutes.

Make the filling in a jug, putting the cream, the cornstarch dissolved in milk, eggs, cooked spinach, and a layer of fresh strawberry slices, cover the strawberries with more filling and sprinkle some grated cheese.

Bake for 40 minutes until brown, serve warm.
