Cress, blackberries, and goat cheese salad

  • 3.5 oz goat cheese
  • 7 blackberries
  • 1/4 cup cress
  • 1/2 cup soy sprouts
  • 1 handful alfalfa sprouts for decoration


  • 2-3 tbsp olive oil
  • Juice of ½ lemon
  • 1 tsp honey
  • 1 tbsp soy sauce
  • 1 tsp mustard (Dijon, ideally)
  • A pinch of salt


Wash and dry the sprouts and cress. Cut the goat cheese in thick rectangles and set aside.

Make a bed with soy sprouts on an individual plate and form a square with the goat cheese rectangles on top of it. Put the cress over the goat cheese, the blackberries, and top with a handful of alfalfa sprouts.

For the dressing, mix all the ingredients and stir well.
