Ingredients

Bilinis:

  • 1 egg
  • 1 cup flour
  • 1 tsp powder yeast
  • A pinch of salt
  • ½ cup sugar
  • 1 tbsp butter
  • 1 cup milk

Blinis with cream cheese, serrano ham, and physalis:

  • 12 blinis
  • 4 tbsp cream cheese
  • 3 slices serrano ham
  • 6 physalis

Veal pâté blinis with caramelized strawberries:

  • 12 blinis
  • 3 tbsp veal pâté
  • 6 strawberries
  • 1 tbsp sugar

Blinis with cream cheese, smoked salmon, and blueberries:

  • 12 blinis
  • 6 tbsp cream cheese
  • 4 slices smoked salmon
  • 12 blueberries

Preparation

Bilinis:
Sift the flour and yeast into a bowl, add the salt and sugar. Add the milk, egg, and butter. Beat well until obtaining a smooth dough. Cover the bowl and allow to set in the fridge for 30 minutes.

Take out and heat a non-stick pan or griddle over medium heat. To make the blinis, pour two tablespoons of dough for each, first one and then the other is poured little by little in the center of the first one.

Once the edges start becoming brown, flip over. Allow to cook on the other side for a few seconds and remove from the pan. Repeat until using all the dough.

Blinis with cream cheese, serrano ham, and physalis:
Beat the cream cheese until soft, put over the blinis, then add a serrano ham rose and finish with a half of physalis.

Veal pâté blinis with caramelized strawberries:
Thinly dice the strawberries, sauté in a pan with the tablespoon of sugar.

Put a base of pâté over the blinis and add the caramelized strawberries.

Blinis with cream cheese, smoked salmon, and blueberries:
Beat the cream cheese until soft, add over the blinis, then the smoked salmon, and finish with a blueberry.
