Ingredients

  • 1 lb 2 oz salmon
  • Sesame oil

For the ceviche dressing:

  • 1 lemon
  • 1 tbsp mayonnaise
  • 1 tbsp natural yogurt
  • 1/2 tbsp mustard
  • 2 tbsp olive oil
  • 2 or 3 cubes of raw fish
  • 2 tbsp chives
  • 1 tbsp capers
  • Salt
  • Pepper

Preparation

Dice 1 lb 2 oz of salmon. The easiest way to do it is with the fish semi-frozen, that way the cubes will be square and perfect. Add 2 tablespoons of sesame oil and mix with the fish.

For the ceviche dressing:

Put the lemon juice, 1 tablespoon of mayonnaise, 1 tablespoon of natural yogurt, 1/2 tablespoon of mustard, 2 tablespoons of olive oil, 2 or 3 cubes of raw fish, 2 tablespoons of chives, 1 tablespoon of capers, salt and pepper in a blender or food processor. Blend to make a smooth sauce.

Put the raw salmon with sesame oil in a plate and bathe with sauce, add julienned onion, capers, coriander and blueberries on top.
