ROASTED TOFU WITH TOMATOES & ROUGH BINDWEED FRUIT

Ingredients

  • 14 oz tofu
  • 1 lb 2 oz tomatoes
  • 1 cup rough bindweed fruit
  • 1/2 cup water
  • 2 garlic cloves, grated
  • 1 handful of coriander
  • 1/2 tsp cumin
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • Salt and pepper to taste

Preparation

Preheat the oven to 450°F.

In an oven dish, chop the tomato and put in the tofu, scatter rough bindweed fruit.

Separately, mix all the spices, wine, water, oil and pour over the dish. Add coriander sprigs and cover the dish with aluminum foil.

Bake covered for 30 minutes, then remove the foil and keep baking for 20 more minutes.

Serve hot.
