Cucumber, blackberry and blueberry salad

Ingredients

  • 3 cucumbers
  • 2 avocados
  • ½ cup blackberries
  • ½ cup blueberries
  • ½ cup walnuts
  • 4.5 oz grated mozzarella cheese
  • 1 handful arugula leaves (organic, ideally)
  • Pepper

For the vinaigrette:

  • 3 tbsp lemon juice
  • ½ cup olive oil
  • 2 tsp brown sugar
  • A pinch of salt

Preparation

Slice the cucumbers and put in a serving dish. Add the washed and dried arugula and put the grated mozzarella cheese over it.

Split the avocados in half and put the 4 halves in the dish. Sprinkle chopped walnuts over the salad and add freshly ground pepper.

For the dressing, mix all the ingredients well.
