Ingredients

  • 3 cups cherries, pits and stems removed
  • 1 cup pears, peeled and chopped (about 1 large pear)
  • 4 tbsp white granulated sugar (you can replace it with honey or simply not use it)

This is a cherry and pear recipe, but you can make it with any fruits you prefer. The only important thing is that if you use a low-fiber fruit, mix it with a high-fiber one (like apple, pear or pineapple).

Preparation

Preheat the oven to 210°F (or the lowest temperature of your oven).

Put the cherries, pear and sugar in a pot, heat over low heat, stirring occasionally.

Turn up the heat to maximum and cook for 5 minutes, stirring (the idea is that the water of the fruit evaporates).

Carefully blend the fruit in a blender until smooth.

Put a silicone mat in the oven tray and pour the blended mixture. Spread with a spatula to make it thin like paper.

Put in the oven until you can touch it and it doesn’t stick to your fingers. The time can vary A LOT depending on the amount of water in the fruit and the temperature of the oven, but it is around one hour.

Allow to cool in the oven.

Cut long strips as wide as you prefer (I make them around 2 inches wide), roll, and enjoy!

In theory, these fruit leathers can be stored for a long time in parchment paper, but I have never checked it in practice, because they never last longer than 3 hours in my house!
