  • 4 eggs
  • 9 oz sugar
  • 7 oz butter
  • 7 oz pistachios, peeled and ground
  • 2 oz grated coconut
  • 2.5 oz flour
  • 7 oz blackberries
  • 0.7 oz pistachios, whole
  • Vanilla extract
  • Zest of 1 orange

For decoration:

  • 1 tbsp powdered sugar
  • 5.5 oz fresh blackberries


Preheat the oven to 360°F and butter a baking pan about 9 inches in diameter.

Melt the butter and allow to cool.

Beat the eggs until foamy, add sugar and keep beating until dissolving the crystals.

Add melted butter (cold), then vanilla extract and orange zest. Mix well and stop beating.

Separately, mix the dry ingredients: ground pistachio, flour, grated coconut and add this mixture to the beaten eggs. Finally, add 7 oz of blackberries.

Pour the mixture into a buttered mold, sprinkle over the whole pistachios and bake for 50 to 60 minutes


Take out and allow to cool before unmolding.

Decorate with powdered sugar and blackberries on top before serving.
