For the dressing:
Peel and slice the turnips, take four slices and cut into spirals, allow to rest in cold water while preparing the rest of the recipe.
Peel the grapefruit, trying to remove as much skin as possible, and slice.
Remove the turnips from the water and mix in a bowl with the ingredients for the dressing. Put in a dish with the grapefruit and raspberry slices. Decorate with mint leaves.
