(4 servings)

  • ½ cup couscous
  • 1 cup boiling water or broth
  • 5.3 oz diced cherries
  • 5.3 oz bacon strips
  • 3.5 oz goat cream cheese
  • Salt, pepper

For the dressing:

  • 2 tbsp lemon juice
  • 1 tsp mustard
  • 6 tbsp olive oil


Put the couscous in a bowl and season with salt and pepper. Add boiling water or broth and cover. Let it hydrate for 10 minutes. Remove the lid and thresh manually.

Separately, put the bacon strips in an oven tray and put in the oven at 360°F for 15 minutes (optionally put a non-stick silicone sheet in the tray). Take out, remove the excess oil, dry with a paper towel and put in the oven again until dry and crispy. Allow to cool and then slice.

Finally, put the couscous in a bowl with cherries and bacon dressing and mix well. Add the goat cream cheese in small pieces and serve.
