Ingredients

(12 units)

  • 7.6 fl oz oil
  • 8.4 oz granulated sugar
  • 3 eggs
  • 7.4 oz flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 9 oz cherries, pitted and diced
  • ¼ cup Turkish apricots, thinly diced
  • ½ cup chopped walnuts

Frosting:

  • 7 oz butter at room temperature
  • 11.6 oz cream cheese at room temperature
  • 4.9 oz powdered sugar
  • 1 tsp cinnamon powder
  • ¼ tsp ground cloves
  • ½ tsp powdered ginger
  • ½ tsp cardamom powder

Preparation

  1. Preheat the oven to 390°F.
  2. Beat the eggs until foamy, add sugar and keep beating until dissolving the crystals.
  3. Add oil and once well mixed, add cherries, apricots and walnuts. Lastly, add sifted flour with baking powder and cinnamon powder. Mix well.
  4. Distribute into previously buttered muffin molds.
  5. Bake for 10 minutes at 390°F and then 15 more minutes at 360°F. Take out and allow to cool over a baking rack. Unmold when warm.
  6. For the frosting, cream the butter until it has an ointment texture, add powdered sugar and spices, and beat until well mixed, taking care not to leave any pieces of butter. Lastly, add cream cheese and beat it until everything is well incorporated.
  7. Then put the frosting in a pastry bag and decorate the muffins.
