Banana Bread with Blueberries (Vegan)

Ingredients

  • 1/3 cup and 1 tsp of liquid coconut oil
  • 3 ripe bananas (1 1/3 cup of pure approximately)
  • ¾ cup blueberries
  • 1 cup and 1 tbsp rice flour
  • 3/4 cup almond flour (2.5 oz)
  • 1/4 cup cornstarch
  • 2/3 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 1/8 tsp fine sea salt
  • 1/4 cup vegetable milk (2 fl oz)
  • 1 tsp vanilla extract
  • 2 tbsp ground flax seeds (soaked in 4 tbsp water for 10 minutes)

Decoration:

  • 1 banana
  • ¼ cup blueberries
  • 1 tsp poppy seeds

Preparation

Preheat the oven to 350°F and prepare a rectangular baking pan (the one used for loafs of bread): grease with a tablespoon of coconut oil, cover with wax paper and grease again. Set aside.

Mix all the dry ingredients in a bowl using a wooden spoon. Add the vegetable milk, vanilla extract, coconut oil, and ground flax seeds with water. Mix thoroughly. Finish by adding the mashed bananas in folding motion, and the blueberries. Pour the mixture into the baking pan and even the surface with a spatula.

As decoration, cut the banana into rondelles and put on top of the mixture with the blueberries. Sprinkle poppy seeds and bake for 40 minutes.
