Physalis in mint syrup

Ingredients

  • 10.5 oz physalis, washed
  • 5.3 oz white granulated sugar
  • 1 tbsp lemon juice
  • 10 mint leaves (optional)

Preparation

Mix all ingredients in a pot, that is: physalis, sugar, lemon juice and mint leaves, then allow to rest for 15 minutes. Crush 4 or 5 physalis using a spoon to break them apart and allow them to release their juice and pips.
Cook over low heat without boiling, until the sugar is dissolved, for around 5 minutes.
Allow to cool.
Put in the fridge inside a covered bowl (ideally made of glass).
Refrigerate for 1 day.
Put the mixture back in the pot over low heat until it starts to boil, for around 10 minutes.
Pour into clean containers if you prefer to store them or serve when cold. Enjoy!
