For the blackberries:

  • 1 1/2 cup blackberries (fresh or frozen)
  • 1/4 cup sugar

Coffee sponge:

  • 2 tbsp instant coffee
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup plant-based milk
  • 1 1/2 tsp vanilla extract
  • 1/2 cup plant-based yogurt
  • 1/3 cup plant-based margarine, melted

Brown sugar coating:

  • 1 tsp cinnamon
  • 1 cup flour
  • 1 cup brown sugar
  • 6 tbsp plant-based margarine, cold


Heat the oven to 360°F.

Blend the blackberries with 1/4 cup of sugar and set aside.

Mix all the dry ingredients in a bowl. Separately, mix all the wet ingredients. Then incorporate the wet ingredients in the dry ingredients with a mixer and beat until everything is incorporated.

Transfer half of the mixture to a previously oiled mold, put the blackberries with sugar and then add the remaining mixture.

Combine the ingredients for the sugar coating with a spoon and sprinkle the cubes on the mold until covering it completely.

Bake for 40 minutes or until the sponge cake starts to brown on top.
