Ingredients

  • 4 carrots
  • 1/2 garlic in slices
  • Dill
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1/2 cup pomegranate
  • 1 tsp of mint
  • 2 tbsp of feta cheese

Preparation

Preheat the oven to 360°F.

Mix the honey, oil, dill and sliced garlic in a bowl.

Cut the carrots lengthwise into at least one-finger-wide strips and put in an oven tray or dish.

Pour the sauce on top and coat carefully, making sure the carrots are well spread across the tray.

Roast for 20-30 minutes; time will depend on the power of your oven.

Serve the carrots and put shredded feta cheese and minced mint leaves on top.
