Ingredients

  • 35 oz topside round
  • 1 tbsp salt
  • 1 tbsp pepper

Roquefort and berry sauce:

  • 1 cup berries
  • 7 oz Roquefort cheese or blue cheese
  • 1 tbsp unsalted butter
  • 3 cups white wine
  • 2 cups cream

Preparation

Mix the salt and pepper in a bowl. Season the meat with these spices. Preheat the oven to 400°F.

Sear the meat on both sides in a pan with hot oil.

Put the meat in the preheated oven. Cook for 30 minutes.

Once the meat is cold, slice thinly.

For the sauce, mix the butter, berries, and cheese. Put the white wine and pepper in a pan, bring to a boil over high heat until it reduces to 1/3 of its original volume. Add the cream and reduce to half. While stirring over low heat, add the butter, berries, and cheese mixture. It should melt little by little.

For the sauce to be creamy, it must be hot.
