Ingredients

(4 mini pizzas)

FOR THE CRUST:

  • 9 oz flour
  • 5 fl oz water (it can be a little less)
  • 1/3 tsp yeast
  • 1/3 tsp salt
  • 1 tbsp olive oil

FOR THE FILLING:

  • 4-6 tbsp tomato sauce
  • 3.5 oz grated goat cheese
  • ½ scallion, sliced
  • ½ cup fresh blueberries

Preparation

To make the crust, put flour, yeast and salt in a bowl and add water little by little, mixing until all the ingredients are well combined. Knead for 4-5 minutes. Put the dough in a bowl, cover and allow to set for 1 hour.

Take the dough out of the bowl and split into 4. Curl each one into a ball, brush them with olive oil, and allow to set for 1 more hour.

Preheat the oven to 480°F with the tray inside.

Over a floured countertop, roll out the dough with your hands, forming a circle, trying to make it as thin as possible.

Fill with tomato sauce, goat cheese, scallion and blueberries, then bake until the edges are brown and the cheese has melted.

Take out of the oven and serve.
