  • 1 tbsp butter
  • 6 large onions
  • 2 liters (4 1/4 pints) water
  • 1/3 cup white wine
  • 3.5 oz strawberries
  • 3.5 oz of Gruyère cheese

6 servings


Step 1:
Wash and julienne the onions.

Step 2:
Sweat the onions in butter for 30 minutes, they must be brown, but not burnt. Add a thin veil of flour and remove from the heat for a minute. Pour the white wine and reduce completely.

Step 3:
Add the water and cook for 30 minutes, add salt and pepper.
Thinly dice the strawberries. Grate the Gruyère cheese.

Step 4:
Add the strawberries and grated cheese at the moment of serving.
