Mushroom and Strawberry Ceviche

Ingredients

  • 1 lb mushrooms
  • 5.5 oz strawberries
  • 2 scallions
  • 1/2 green bell pepper
  • 1/2 cup lemon
  • 4 tbsp olive oil
  • 1/2 tsp ground ginger
  • 1 avocado
  • ½ cup coriander

Preparation

Step 1:
Clean and slice the mushrooms, dice the strawberries, and slice the scallions.

Step 2:
Mix the ingredients, add lemon juice, ginger, salt, and olive oil, mix well to integrate all the ingredients.

Step 3:
Dice the avocado and mince the coriander, add to the mixture and stir carefully so as not to mash the avocado.

Step 4:
Serve the ceviche in bowls, with toasts on the side if you desire.
