Ingredients

  • 2 cups cream
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 package soft cream cheese
  • 2 envelopes unflavored gelatin
  • 1/2 cup mashed strawberries
  • 3/4 cup boiling water
  • 3/4 cup pomegranate arils juice
  • 1 cup pomegranate seeds

For the topping:

  • 1 envelope unflavored gelatin
  • 1 cup boiling water
  • 1 cup pomegranate seeds for decoration

Preparation

Arrange 9 glasses.

Prepare the jelly for the middle layer combining the jelly powder with 3/4 cup of boiling water, and stirring until the jelly powder has dissolved completely; then add the mashed strawberries and ¾ cup of pomegranate juice. Stir and put in the fridge. Allow the jelly to cool and solidify. Take out of the fridge and stir every 5 minutes. Start with the next step.

Soften the cream cheese at room temperature and beat it at high speed until soft and spongy. Then put the heavy cream, powdered sugar, and vanilla in a bowl. Beat at high speed until soft peaks form. Add the beaten cream cheese little by little. Divide this mixture into two parts.

Put one half in a large pastry bag and pour it into each glass in equal amounts Use a spoon to spread the cream to the edges, forming an even layer.

Save the remaining half in its bowl and add the prepared jelly to the cream. Beat at high speed until well combined. Add 1 cup of pomegranate seeds.

With a big spoon or a pastry bag, pour the prepared jelly mixture on top of the first layer. Put the glasses in the fridge and allow to rest for 1 hour. After one hour, prepare the last layer mixing one package of jelly powder with 1 cup of boiling water and 1 cup of pomegranate juice. Allow the jelly to cool down completely at room temperature before using it.

Pour the cool jelly on top of the mousse to form the last layer. Put the glasses in the fridge and allow the layers to set completely, preferably overnight. Decorate the top with more seeds if you wish.
