Put the shredded crab, cheese cream cheese, chives, lemon juice and olive oil in a bowl, season with salt and pepper, and mix all the ingredients well until obtaining a paste.
Slice the avocado and make a tile (roll out the avocado in plastic wrap).
Spread the crab paste on the avocado tile and roll up.
Cut the roll into 4 and put in a plate.
For the sauce: cut the cherries into wedges and put in a blender with 1.7 fl oz of water. Blend and add the mixture to a small pot with sugar, salt and pepper. Allow to reduce until forming a bound sauce.
Serve the roll with sauce on the side.
