  • 1 cup hazelnuts
  • 15 tbsp cocoa powder
  • 6 dates, pitted
  • ½ cup raspberries
  • 1/3 cup vegetable milk

This dessert has three layers. For the middle layer, mix a handful of hazelnuts with 5 tablespoons of cocoa powder and 2 dates. With the blender, grind a little until forming a dense, homogeneous dough. Set aside.


Then, for the first layer, grind the rest of the hazelnuts with the 10 other tablespoons of cocoa powder and 4 dates together with the vegetable milk. The idea is to obtain a creamy paste, like a mousse. If it is too thick, add more milk little by little.


To assemble, first add a layer of raspberries, then add the central layer mixture with a wet spoon, as it will be difficult to pour it into the glasses due to its thickness. Add the creamy mixture for the first layer.
