  • 1 beetroot
  • 3.5 oz strawberries
  • 3.5 oz blueberries
  • ½ red onion
  • 1 tbsp coriander
  • Olive oil
  • Salt and pepper

Step 1:
Slice the beetroot with a mandoline slicer and add a pinch of salt and pepper.

Step 2:
Place the beetroot slices in a greased oven tray and bake for 45 minutes, or until the beetroots’ edges are dehydrated.

Step 3:
Dice the red onion and strawberries, and mince the coriander.

Step 4:
Put all the ingredients together in a bowl, season with olive oil and salt, and enjoy this delicious pebre with beetroot chips.
