  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 3/4 cup butter
  • 3 yolks and 2 whites
  • 1/2 tsp powdered ginger
  • 1/2 tsp cloves
  • 1/2 tsp cinnamon
  • A pinch of salt
  • 1 tsp vanilla extract
  • ¾ cup blueberries

  • 1 egg white
  • 1 cup powdered sugar
  • Drops of lemon juice

Beat the sugar and butter, previously melted, add 2 whites, 3 yolks, vanilla extract, salt, cinnamon, cloves and ginger, and beat everything together.

Add the sieved flour. You can use a hand mixer at first, then knead until obtaining a smooth and consistent paste. Put the dough in the fridge, wrapped in plastic wrap, for half an hour.

Then extend the dough with a rolling pin (thickness to taste) and cut the dough with a gingerbread man cookie cutter. Bake for 9 minutes at 360°F.

For the glaze, mix all the ingredients until obtaining a creamy paste. If it is too runny, add more sugar.

Using a pastry bag with a small piping tip, decorate the cookies, outlining the gingerbread man, its face and clothes, and put 2 blueberries on its body as buttons.
