Blackberry mousse

Ingredients

  • 12 oz blackberries
  • Zest and juice of 2 oranges
  • 2 tbsp granulated sugar
  • 1 can condensed milk, about 14 oz
  • 0.5 oz unflavored gelatin
  • 1/3 cup boiling water
  • 2 cups milk cream, refrigerated overnight
  • 4 tbsp powdered sugar, sugar glass or icing sugar

Preparation

In a small pot heat the blackberry, orange juice and zest, and granulated sugar. Cook over medium heat, stirring occasionally until it thickens a bit and the blackberries come apart a little. Allow to cool.

Mix the condensed milk with the blackberry mixture.

Dissolve the gelatin in boiling water and add to the previous mixture.

Whip the cream with powdered sugar until it increases its volume and thickens. Add the blackberry mixture little by little and mix in folding motions to prevent the mixture from losing air.

Pour the mixture into individual bowls and chill for at least 6 hours until the gelatin sets. Serve while cold and enjoy!
