Ingredients

For the crust:

  • 4.5 oz salted butter at room temperature
  • 1 cup white granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking powder

For the filling:

  • 2 cup whole milk
  • 1/2 cup cornstarch
  • 1/2 cup white granulated sugar
  • 1 tsp vanilla extract or the zest of one lemon

For decoration:

  • 2-3 cups of your preferred fruit (I used mixed berries this time)

Preparation

For the crust:
Preheat the oven to 360°F.
Beat the butter and sugar until foamy in a bowl, add the egg and continue beating until smooth, finally mix in the flour and baking powder to obtain a dough that is easy to work with.
Roll out the dough with your fingers around the bottom in a mold with removable bottom and dock the edges with a fork so the dough does not puff up, bake for 15 to 20 minutes or until the crust is brown.
Take out of the oven and allow to cool.

For the filling:
Dissolve the cornstarch in 2 cups of milk in a small pot with a wire whisk, add sugar and vanilla extract or lemon or orange zest.
Cook over medium heat, stirring with the wire whisk and when it starts to boil, cook for 2 minutes, stirring constantly to prevent lumps.
Pour the milk mixture over the dough, while the mixture is still hot.
Allow to cool at room temperature.
When the mixture is completely cold, decorate with fruit and enjoy!
