Ingredients

(4 servings)

  • 2 eggs
  • 2 fl oz lemon juice
  • Zest of 1 lemon
  • 4 gelatin leaves
  • Stevia drops
  • 3.4 fl oz milk
  • 1 lb 2 oz ricotta
  • 6 strawberries

Preparation

  1. Hydrate the gelatin leaves in a dish with water.
  2. Separate the whites from the yolks.
  3. Mix the yolks with ricotta, stevia, lemon juice and zest.
  4. Drain and dissolve the gelatin in hot milk. Add to the previous mixture.
  5. Beat the whites to stiff peaks and add to the preparation, stirring in folding motion so it does not lose volume.
  6. Distribute in 4 glasses and put in the fridge for at least 2 hours.
  7. To serve, slice the strawberries and distribute in each glass.
