Ingredients

  • 6 lb beef (loin, heel, or chuck tender)
  • 1 tsp ground pepper
  • 1 tbsp oregano
  • Old style mustard
  • 1/2 cup oil
  • 1 tsp salt
  • Other herbs and spices to taste (optional)

Rough bindweed fruit sauce:

  • 9 oz fresh rough bindweed fruit
  • 1/3 cup freshly squeezed orange juice
  • 1/3 cup port wine (or another sweet wine)
  • 1/3 cup brown sugar
  • 1 cinnamon stick or one clove (optional)

 

Preparation

Mix all the spices with oil and season the meat with this mixture.

Put the meat in the oven at high heat for 15 minutes, then lower the temperature to medium heat, and cook for around 1 hour.

Rough bindweed fruit sauce:
Rinse the rough bindweed fruit and put all the ingredients in a small pot.

Cook the mixture over medium heat for around 20 minutes. Stir every now and then so that everything cooks evenly. It is not necessary to blend or beat the sauce vigorously, since the rough bindweed fruit will begin to collapse little by little by the effect of the heat. Besides, the point of this sauce is to be able to slightly distinguish the fruit pieces.

After the cooking time, you will see that the sauce has reduced and thickened. If you want it to be more concentrated, leave it on the heat for a few more minutes until it reaches the desired consistency.

Remove from the heat and allow to cool. Consider that it will thicken a little more when it cools.
