Ingredients

FOR THE ICE CREAM:

  • 2 very ripe bananas, ideally speckled
  • ½ cup berries
  • 1 tbsp honey

FOR THE OATMEAL COOKIES:

  • 1 cup oat flour
  • ½ cup almond or walnut flour (grind in a food processor)
  • 2 tbsp olive oil or butter
  • 1 tsp baking powder
  • 5 tbsp honey or ½ cup sugar cane
  • 2 eggs

Preparation

Slice the banana and mince the berries. Freeze for a few hours.

Put the banana in a high-power food processor along with the berries and honey. Crush until there are no lumps left.

Transfer to a Tupperware-type container with a lid and put in the freezer for a few minutes to make the ice cream.

Preheat the oven to 360°F.

Mix all the cookie ingredients together in a bowl, shape the cookies using your hands and bake for 15-20 minutes or until brown. Allow to cool.

Take the ice cream out of the freezer, fill the cookies and put them back in the freezer until serving.
