ABALONES IN CURRY SAUCE

Ingredients

  • 6 or 8 abalones
  • Olive oil
  • 2 tbsp butter or ghee
  • 2 shallots, finely chopped
  • Garlic
  • Salt
  • Pepper
  • Turmeric
  • 1/2 tbsp curry powder
  • 1/4 tsp cardamom
  • 1/4 tsp cumin
  • 1/2 tsp cinnamon
  • 1/4 tsp paprika
  • 1 cup milk
  • 1 tsp cornstarch
  • 7 oz cream
  • Pomegranates
  • Coriander

Preparation

Cut 6 or 8 abalones in slices. They were canned and cooked.

Pour a dash of olive oil in a pan with 2 tablespoons of butter or ghee, 2 shallots, minced, if you like garlic you can also add some, salt and pepper. Cook for a few minutes and when it looks translucent, add 1 tablespoon of turmeric, 1/2 tablespoon of curry, 1/4 teaspoon of cardamom, 1/4 teaspoon of cumin, 1/2 teaspoon of cinnamon and 1/4 teaspoon of paprika. Cook until you feel an intense smell of spices.

Add a cup of cold milk mixed with a teaspoon of cornstarch and 7 oz of cream. Add the sliced abalones and 4 or 5 tablespoons of water from the abalones can. Cook until the sauce thickens.

Add pomegranate and minced coriander. Eat with rice and enjoy!
