For the baskets:

  • 2 ripe bananas, mashed
  • 2 tbsp melted coconut oil
  • 1/3 cup cranberries
  • 1 1/2 cups oatmeal
  • 3 tbsp maple syrup
  • 1 tsp cinnamon

For the filling:

  • 5.3 oz silken tofu
  • 1 ripe banana, mashed
  • 1 tbsp cocoa powder
  • 4 tbsp maple syrup
  • Peanut butter
  • 1 1/2 cups mixed berries


Preheat the oven to 360°F.

Mix all the ingredients for the baskets in a bowl until everything is incorporated.

Put a heaping tablespoon of batter into 12 muffin molds and press to shape the baskets.

Bake for 20 minutes or until the base is brown. Remove from the heat and allow to cool.

For the filling, blend the silken tofu, banana, cocoa powder and maple syrup.

Fill some baskets with batter and others with peanut butter.

Decorate with berries to taste.
